Yes, you can. To avoid the zucchini from turning watery once defrosted, it’s a great idea to chop the zucchini into chunks and blanch it before freezing. Allow it to cool completely, place the blanched zucchini onto a baking paper lined tray and freeze for 1-2 hours. Place the frozen zucchini pieces into an airtight container and freeze for up to 3 months.
